This baked cod in a foil packet is a simple, reliable way to cook tender, flaky fish with minimal effort. Cod fillets are gently steamed in butter, lemon, and fresh dill, locking in moisture and clean flavor. Whether cooked on the grill or in the oven, the foil packet method makes this recipe forgiving and adaptable—perfect for quick weeknight dinners or easy outdoor cooking.

Ingredients

  • 1 lb of cod filets, more or less as desired
  • 2 tablespoons of butter, diced
  • 1 lemon, sliced
  • 2 tablespoons of dill, chopped
  • aluminum foil

Instructions

  1. Pat the cod dry and season with a pinch of salt and cut into 2 equal portions
  2. Make 2 aluminum foil boat sand place each piece in a boat
  3. Top each piece of cod with a tablespoon of butter and a tablespoon of dill
  4. Put the lemon slices on top and fold and seal the foil boats
  5. I usually place them on a preheated grill for about 20 – 25 minutes. You can also put them on a baking sheet and bake in a 425℉ oven for 20 – 25 mins

Notes

We’ve found a lot of variability in this recipe depending on the thickness of the cod & temperature of the grill. It’s best to check often and adjust as need to get your desired doneness.
