Introduction
There's something calming about cooking fish this way.
Foil packets feel almost old-school - simple, reliable, no drama. The cod gently steams in its own little sealed environment with butter, lemon, and fresh dill. Nothing fancy. Nothing complicated. Just clean flavor and perfectly tender fish.
The beauty of this recipe is its flexibility. Whether you cook it on the grill or in the oven, the foil locks in moisture and protects the fish from overcooking (within reason - still check it). It's ideal for weeknights when you want something lighter but still satisfying.

Why This Recipe Works
Foil packet cooking is one of the easiest ways to prepare fish because it retains moisture and gently steams the cod. Butter adds richness, while lemon and fresh dill bring brightness, keeping the flavor clean and balanced. The sealed packet creates a forgiving cooking environment, making this recipe reliable whether you're using the grill or oven. It's simple, fresh, and perfect when you want something light without sacrificing flavor.
Ingredient Notes
A few small details can make a big difference here.
- Cod fillets - Mild, flaky, and ideal for gentle cooking methods like steaming.
- Butter - Adds richness and helps keep the fish moist.
- Lemon - Brightens the flavor and balances the richness.
- Fresh dill - Adds a clean herbal note that pairs beautifully with seafood.
- Aluminum foil - Creates a sealed environment that prevents the fish from drying out.
Simple ingredients let the fish’s natural flavor shine.
Tips for Best Results
- Pat the cod dry before seasoning to help the butter adhere.
- Seal the foil tightly to trap steam and moisture.
- Check the fish near the end of cooking since thickness can vary.
- Cook just until the fish flakes easily with a fork.
- Use fresh lemon juice just before serving for extra brightness.
Gentle cooking keeps the texture tender.
Variations and Substitutions
This recipe is easy to adapt depending on what you have.
- Swap cod for halibut, haddock, or tilapia.
- Add sliced garlic or shallots for more depth.
- Use olive oil instead of butter for a lighter option.
- Add thinly sliced zucchini or asparagus to the packet.
- Sprinkle with parsley or chives for a different herb profile.
Foil packet cooking is very flexible.
Storage and Reheating
Store leftovers in an airtight container in the refrigerator for up to 2 days.
Reheat gently in the oven at a low temperature or in the microwave at reduced power to avoid drying out the fish. Add a small squeeze of lemon before serving to refresh the flavor.
Fish is best enjoyed fresh but reheats well when handled gently.
