Why This Recipe Works
This casserole is built for simplicity and reliability.
Bisquick provides structure without measuring flour, baking powder, or other ingredients. The eggs and milk create a custard-like base that bakes into a fluffy, tender cake. Ham adds salt and richness, cheddar brings sharp flavor, and onions and green pepper add balance and subtle sweetness.
Everything bakes together in one dish, making it low-effort but high-reward.
Ingredient Notes
Cooked Ham
Leftover ham works perfectly. Dice evenly for a consistent texture.
Cheddar Cheese
Sharp cheddar provides the best flavor. Mild cheddar works for a softer taste.
Onion & Green Pepper
Add freshness and slight sweetness to balance the richness.
Bisquick
Acts as both a thickener and a structure builder, keeping the casserole light but sturdy.
Milk
Whole milk creates a richer custard, but 2% works fine.
Eggs
The backbone of the casserole - they bind everything together.

Tips for Best Results
- Grease the baking dish well to prevent sticking.
- Whisk the egg mixture thoroughly for an even texture.
- Let the casserole rest 5-10 minutes after baking before slicing.
- Check doneness by inserting a knife into the center - it should come out clean.
- If browning too quickly, tent loosely with foil.
Variations and Substitutions
- Swap ham for cooked breakfast sausage or bacon.
- Use Monterey Jack or Swiss instead of cheddar.
- Add spinach or mushrooms for extra vegetables.
- Stir in a pinch of paprika or dried thyme for added flavor.
- Make it spicy with diced jalapeños or a dash of hot sauce.
Storage and Reheating
Refrigerator:
Store covered for up to 4 days.
Freezer:
Freeze individual slices wrapped tightly for up to 2 months.
Reheating:
Warm in a 325°F oven or microwave in short intervals until heated through.
This casserole reheats beautifully, making it great for meal prep.
