Why This Recipe Works
This small-batch meatloaf keeps everything you love about the classic version while scaling it down just enough.
The egg binds the mixture, breadcrumbs provide structure and tenderness, and Worcestershire sauce adds depth and savoriness. A touch of ketchup inside keeps the loaf moist, while the ketchup glaze on top caramelizes slightly in the oven for that signature sweet-and-savory finish.
Because it's baked free-form instead of in a loaf pan, the edges develop more flavor and the texture stays tender throughout.

Ingredient Notes
Ground Meat
Beef offers the richest flavor, but turkey or a meatloaf mix works well. An 80/20 beef blend gives the best balance of moisture and flavor.
Egg
Essential for binding. Lightly beat before adding for even distribution.
Onion
Finely mince so it blends seamlessly into the loaf.
Breadcrumbs
Plain breadcrumbs provide structure. Panko works too but creates a slightly lighter texture.
Ketchup
Adds moisture and classic flavor. Used both inside and as a glaze.
Worcestershire Sauce
Adds savory depth and subtle complexity.
Garlic Powder & Marjoram
Simple seasoning that keeps the flavor classic and comforting.
Tips for Best Results

Storage and Reheating
Refrigerator:
