Garlic Spinach & Mushroom Chicken Skillet

Ingredients
- ¾ tsp olive oil
- 1/2 onion, chopped
- 2 – 4 oz skinless chicken breasts
- 1 cup fresh mushrooms, sliced
- 2 garlic cloves finely dices
- 1 ½ cups baby spinach
- 1 tbsp chopped pecans
- 1 slice reduced fat provolone cheese, halved
- 2 green onion, chopped
Instructions
- Heat oil in large skillet
- Sauté green onions and mushrooms
- Add in spinach and pecans
- Remove from heat when spinach is wilted
- Grill chicken 4 -5 minutes per side
- Top with cheese. Remove from heat when cheese is melted
- Top chicken with mushroom, spinach and scallons and serve
Notes
Patient Cooks Notes: If you want to make this a one-pan dish, brown the chicken on both sides for about 3 – 4 minutes per side, remove from the pan, and tent. Then start at the top of the recipe. Add the chicken at the end, topwith the provolone and warm through until it melts, then plate and enjoy!



I love how simple and balanced this dish is. The mushrooms add real depth, the spinach keeps it light, and the smaller chicken portions make it feel intentional rather than oversized. This is one of my go-to skillet meals when I want something clean, comforting, and quick.
