115 ounce cans chili beans, drained – you can also use plain Pinto beans
115 ounce can chili beans, in spicy sauce
128 ounce cans diced tomatoes with juice
3ounceof tomato paste
1/2large yellow onion,chopped
3stalks celery,chopped
1/2green bell pepper,seeded and chopped
1/2red bell pepper,seeded and chopped
14 ounce chopped green chilis
1slicesof bacon,chopped
2beef bouillon cubes
1/4 cupbeer
2tablespoonchili powder
1/2 tablespoonWorcestershire sauce

1 teaspoonsground cumin
1 teaspoonshot pepper sauce

Heat a large stock pot over medium-high heat. Crumble the ground beef, sausage, and bacon into the hot pan, and cook until evenly browned. Drain off excess fat.
Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, green chilis, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 1 hour, stirring occasionally.
After 1 hour, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
To serve, ladle into bowls, and top with corn chips, scallions, shredded cheddar cheese or anything else you’d like.
