These buffalo chicken lettuce wraps are a simple, fast, and protein-packed meal you can throw together in minutes. Tender cooked chicken is tossed with light mayo and Frank’s RedHot, then spooned into crisp butter lettuce leaves and topped with crunchy celery and carrots. Light, satisfying, and full of bold flavor, this is an easy lunch or quick dinner that doesn’t feel like a compromise.

Ingredients

  • 5 oz cooked chicken breast
  • 2 tbsp. light mayonnaise
  • 1 tbsp Franks Red Hot Sauce
  • 1 celery stick, chopped into match-sticks
  • 1 carrot, peeled and chopped into match-sticks
  • 4 leaves butter lettuce

Instructions

  1. Chop chicken breast into fine pieces
  2. Toss in a bowl with mayonnaise & hot sauce
  3. Spoon into 4 lettuce leaves and add celery and carrot sticks. Roll up and serve

Pay attention to the serving size on this one! The time obviously doesn’t include cooking the chicken; I like to sous vide it, but you can cook it however you want … probably shouldn’t deep fry it … it would be amazing, but defeats the “healthy”.
