Simple & Fast Buffalo Chicken Lettuce Wraps

Ingredients
- 5 oz cooked chicken breast
- 2 tbsp. light mayonnaise
- 1 tbsp Franks Red Hot Sauce
- 1 celery stick, chopped into match-sticks
- 1 carrot, peeled and chopped into match-sticks
- 4 leaves butter lettuce
Instructions
- Chop chicken breast into fine pieces
- Toss in a bowl with mayonnaise & hot sauce
- Spoon into 4 lettuce leaves and add celery and carrot sticks. Roll up and serve

Pay attention to the serving size on this one! The time obviously doesn’t include cooking the chicken; I like to sous vide it, but you can cook it however you want … probably shouldn’t deep fry it … it would be amazing, but defeats the “healthy”.



This is one of those recipes I come back to constantly when I want something fast, spicy, and satisfying without feeling heavy afterward. The buffalo flavor hits exactly right, and the crunch from the celery and carrots keeps every bite interesting. It’s proof that healthy food doesn’t have to feel like a compromise.
I eat this for lunch all the time. I use a spicy buffalo dressing from Whole Foods and it super satisfying
